Sugar, Starch and Me

I am truly amazed by the effects of foods we consume everyday. Two months ago I was struggling with fatigue, and frequent urination. Going to my family doctor he assured me it was lack of rest due to parenting and U.T.I. (urinary track infections). I left his office in doubt like I always do and decided my symptoms pointed in other directions.
I have always loaded my morning cup of coffee with sugar, a good energy fix to start my day, as well as eating large amounts of bread to fill me during busy days. This I decided was something that needed to change. It was an unhealthy lifestyle that had created a problem.
Amazingly within two weeks of cutting out my sugar fix, my U.T. problems ceased. Within a month my cronic fatique has disappeared into normal bouts of staying up to late regrets. My mood had changed for the better and my ability to deal with stress is remarkable. Not to mentain my ezema is starting to clear up.
Today in the last two months or so, I have lost weight, feel better, no longer have extreme starch cravings and can function without blowing up from exhastion. Amazing!
Though I am disappointed in myself, I have always ensured the kids avoid to much sugar, as I am well aware of the bodies need for a healthy diet and the effects of a high carb diet. Now why did it take me so long to change my ways? It just seemed like to much effort to alter my bad habits. Now if I can just quit smoking? How does diet affect you?
